Job Requirements

  • Must be able to communicate with, be interested in, and have compassion for the elderly
  • general understanding of State and County Health Department regulations, Title 22 and OBRA
  • possess organizational skills sufficient to meet deadlines and objectives
  • ability to work in a team environment and maintain professional composure under stressful conditions
  • ability to read recipes, menus and production sheets
  • understanding of therapeutic diets and preparation of foods to meet dietary needs
  • operation of food service equipment
  • knowledge of basic food preparation techniques including receiving, identifying, storage, preparation and holding of food items
  • knowledge of HACCP Food Safety Guidelines including proper food temperatures, contamination vs. spoilage, cross-contamination, potentially hazardous foods, personal hygiene
  • ability to perform simple calculations and adjust standardized recipes
  • capability to organize and perform multiple preparation procedures at the same time
  • work hours may require schedule flexibility including early AM shifts starting at 5:00 AM
  • ability to lift and carry light objects and push or pull objects of 50 pounds or less
  • frequent standing, walking, kneeling, twisting upper body, object manipulation, loading and unloading food supplies, handling bulk food items, lifting, pushing and pulling equipment
  • visual ability to identify objects at 20 feet distance and read fine print and discriminate color
  • ability to hear normal sounds with background noise

Job Qualifications

  • High school diploma or equivalent
  • able to read, write, understand and speak English
  • minimum two years of experience as a cook in a skilled or institutional food service facility
  • knowledge of State and County Health Department regulations
  • understanding of Title 22 and OBRA
  • ability to follow food safety and HACCP guidelines
  • capability to prepare therapeutic diets
  • strong organizational skills
  • ability to work in a team environment
  • professional composure under stressful conditions

Job Duties

  • Prepare food for breakfast, lunch, dinner and special functions
  • coordinate preparation and serving of meals to ensure they are flavorful, attractive, accurate, and safe
  • read and follow recipes, menus and production sheets
  • operate food service equipment proficiently
  • understand and accommodate therapeutic diets
  • adhere to State and County Health Department regulations and HACCP Food Safety Guidelines
  • manage food receiving, storage, preparation, and holding
  • perform simple calculations and adjust standardized recipes
  • organize and perform multiple preparation procedures simultaneously
