- must have lead experience in institutional cooking/food preparation (3-5 years)

Job Duties
- Review menus on a daily basis
- prepare all items on the menu in accordance with standard recipe cards and amounts listed on production sheet
- ensure food is on serving line 15 minutes prior to serving time
- bake all cakes, biscuits, cobblers, etc. in accordance with the production sheet
- record amount of food prepared and amount left over on daily production sheet
- complete all other daily production needs such as waste log, in/out leftover refrigeration log, recipe audits, and taste temperature log
- prepare food for employees' cafeteria when assigned
- help serve food at mealtimes when necessary
- prepare food for special functions when necessary
- maintain a clean and safe work area at all times, clean all equipment after each use
- follow all sanitation/food handling requirements
- perform other duties as assigned
