Job Requirements

  • High school diploma or equivalent
  • Must be at least 18 years of age
  • Ability to stand and be on feet for extended periods
  • Ability to lift, bend, and perform physical tasks
  • Experience or willingness to learn food service operations in a correctional setting
  • Understanding of food safety and sanitation regulations

  • Prior institutional food service or restaurant experience preferred
  • Knowledge of food handling regulations
  • Ability to supervise and train staff and inmate labor
  • Strong organizational and multitasking skills
  • Ability to work independently and as part of a team

Job Duties

  • Supervise inmate labor and team members in food prep and food service shifts in the kitchen
  • Prepare, assist, or instruct inmate labor and team members in preparing quality foods according to menu, recipes, and work instructions
  • Ensure proper and sanitary storage of all food items
  • Serve food during planned meal schedules following department policies and procedures
  • Utilize kitchen utensils and equipment to cook, prepare, and serve food according to recipes and portion controls
  • Follow all food safety regulations including sanitation, food handling, and storage
  • Train other food service workers
  • Maintain a clean and sanitary work environment including cleaning refrigerators, freezers, cooking equipment, and serving equipment
  • Enforce uniform policies and ensure proper kitchen cleanliness including garbage collection, floor cleaning, sweeping, mopping, and dishwashing
  • Promote a healthy and safe work environment for employees and inmates
  • Perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
  • Perform other related duties as assigned
