Job Requirements
- High school diploma or equivalent
- Must be at least 18 years of age
- Ability to stand and be on feet for extended periods
- Ability to lift, bend, and perform physical tasks
- Experience or willingness to learn food service operations in a correctional setting
- Understanding of food safety and sanitation regulations

- Prior institutional food service or restaurant experience preferred
- Knowledge of food handling regulations
- Ability to supervise and train staff and inmate labor
- Strong organizational and multitasking skills

Job Duties
- Supervise inmate labor and team members in food prep and food service shifts in the kitchen
- Prepare, assist, or instruct inmate labor and team members in preparing quality foods according to menu, recipes, and work instructions
- Ensure proper and sanitary storage of all food items
- Serve food during planned meal schedules following department policies and procedures
- Utilize kitchen utensils and equipment to cook, prepare, and serve food according to recipes and portion controls
- Follow all food safety regulations including sanitation, food handling, and storage
- Train other food service workers
- Maintain a clean and sanitary work environment including cleaning refrigerators, freezers, cooking equipment, and serving equipment
- Enforce uniform policies and ensure proper kitchen cleanliness including garbage collection, floor cleaning, sweeping, mopping, and dishwashing
- Promote a healthy and safe work environment for employees and inmates
- Perform physical tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- Perform other related duties as assigned
