Job Requirements

  • High school diploma or equivalent
  • One year of food service or related experience
  • Must possess a valid food handler's permit in the state of New Mexico or Texas
  • Valid driver’s license in New Mexico or Texas with acceptable driving record, unless waived by management

Job Duties

  • Prepare and cook quantity of food required according to menu and production sheet
  • Maintain kitchen equipment in orderly workable condition
  • Ensure work area is safe, clean and sanitary at all times
  • Ensure the count and control of knives and other controlled kitchen tools
  • Provide an accurate count of all controlled items at the beginning and end of each shift
  • Prepare foods as directed for special facility functions and special diets when prescribed by staff doctor
  • Assist in cleaning kitchen work areas following each meal
  • Coordinate the work of inmates assigned to assist in the cafeteria, which includes long periods of sitting and standing
