Job Requirements
- High school diploma or equivalent
- One year of food service or related experience
- Must possess a valid food handler's permit in the state of New Mexico or Texas
- Valid driver’s license in New Mexico or Texas with acceptable driving record, unless waived by management

Job Duties
- Prepare and cook quantity of food required according to menu and production sheet
- Maintain kitchen equipment in orderly workable condition
- Ensure work area is safe, clean and sanitary at all times
- Ensure the count and control of knives and other controlled kitchen tools
- Provide an accurate count of all controlled items at the beginning and end of each shift
- Prepare foods as directed for special facility functions and special diets when prescribed by staff doctor
- Assist in cleaning kitchen work areas following each meal
- Coordinate the work of inmates assigned to assist in the cafeteria, which includes long periods of sitting and standing
