- two years of full-time paid experience as a cook

Job Duties
- Check menu cards, special and/or modified diet lists to determine types and quantities of foods to be prepared in accordance with standard procedures
- prepare or supervise the washing, trimming, cooking and seasoning of all food items
- utilize a variety of kitchen utensils and equipment such as blenders, mixers, grinders, slicers and tenderizers in the preparation and cooking of foods
- prepare food utilizing such equipment as steam kettles, grills and ovens, maintain correct temperatures for all foods
- taste foods for consistency and seasoning and correct as necessary to assure proper flavor and texture
- apportion servings and prepare or direct the preparation and distribution of food to serving areas in accordance with departmental standards
- inspect foods and meats in work and storage areas for compliance with storage, safety and sanitary standards
- instruct and supervise all dietary aides assigned to unit and assist in orientation and in-service training programs
- participate in daily menu conferences and confer with supervisor concerning menus, food preparation, quality recipes, use of leftovers and related matters
