- elementary school graduation through eighth grade
- formal course in basic cooking principles
- New York City Department of Health Food Protection Course Certificate
- two years of full-time paid experience as a cook or equivalent combination of education, experience and training

Job Duties
- checks menu cards and diet lists to determine food types and quantities
- prepares or supervises washing, trimming, cooking and seasoning of food items
- utilizes kitchen utensils and equipment such as blenders, mixers, grinders, slicers and tenderizers
- prepares food using equipment like steam kettles, grills and ovens and maintains correct food temperatures
- tastes foods for consistency and seasoning and makes necessary corrections
- apportions servings and directs preparation and distribution of food to serving areas
- inspects foods and meats for compliance with storage, safety and sanitary standards
- instructs and supervises dietary aides and assists with orientation and in-service training
- participates in menu conferences and collaborates with supervisor on menu and food preparation matters
