Job Duties
- Understand the proper terms for kitchen equipment and small wares
- Clean food preparation areas, cooking surfaces, utensils, sneeze guards and guest facing areas according to health and safety standards
- Prepare food items in accordance with station guide recipes including portion control and presentation
- Gather and portion items ensuring high quality and serve to guests
- Maintain sanitation, health and safety standards in work areas including temperature checks, wearing gloves and sanitation buckets usage
- Break down workstation, cool food following guidelines and store properly with labeling
- Attend all allergy and foodborne illness in-service training
- Report all accidents and injuries timely
- Comply with all company safety and risk management policies
- Perform other duties as assigned
- Demonstrate proficiency operating advanced cooking equipment such as grills, steamers, robot coupe, immersion mixers and slicers
- Responsible for basic food preparation tasks like cutting meat and fish, knife handling, peeling, slicing, chopping, measuring and mixing ingredients
- Prepare necessary ingredients to replenish station according to par levels
- Follow recipes to produce high quality product
- Ensure food is prepared and presented with high quality, visual appeal and consistency
- Support and guide new cooks in their responsibilities
- Teach others to use all kitchen equipment, processes and procedures
- Communicate with supervisor regarding volume levels and team assignments
- Assist in the control of food and labor costs by eliminating waste and overproduction
- Make recommendations for adjusting pars
- Produce batch goods using advanced classical cooking techniques
- Explain ingredients in the menu and preparation techniques
- Read, interpret and demonstrate culinary fundamentals with knowledge of food handling and ingredients
- Assist with stock put away, maintaining cleanliness and proper rotation in freezers and storage areas
