Job Requirements

  • Elementary school graduation through the eighth grade
  • Completion of a formal course in basic cooking principles
  • Possession of a New York City Department of Health Food Protection Course Certificate
  • Two years of full-time paid experience as a cook or equivalent combination of education, experience, and training
  • Ability to read and write English and understand and carry out instructions

Job Duties

  • Check menu cards and modified diet lists to determine food preparation requirements
  • Prepare or supervise washing, trimming, cooking, and seasoning of food items
  • Utilize kitchen utensils and equipment including blenders, mixers, grinders, slicers, and ovens
  • Prepare food using steam kettles, grills, and ovens while maintaining correct temperatures
  • Taste foods for consistency and seasoning and make necessary adjustments
  • Apportion servings and oversee preparation and distribution of food
  • Inspect foods and meats for compliance with storage, safety, and sanitary standards
  • Instruct and supervise dietary aides and assist in training programs
  • Participate in daily menu conferences and consult with supervisors on menus, recipes, and food use
