Job Requirements
- high school diploma or equivalent
- experience in institutional or large scale food preparation
- knowledge of food safety and sanitation regulations
- ability to stand for extended periods
- ability to lift up to 50 pounds
- valid New Mexico Class D Driver's License
- successful completion of pre-employment physical and drug alcohol screening
- passing of criminal background check
- willingness to work occasional irregular hours
- ability to use protective equipment and clothing
- clear vision for short and long distances
Job Qualifications
- knowledge of institutional food preparation and storage requirements
- knowledge of nutritionally balanced meals
- knowledge of food preservation and kitchen and cafeteria sanitary and safety standards regulations
- ability to communicate effectively with staff and the public
- ability to follow verbal and written instructions
- ability to deal with difficult clients
- skilled in safe and effective kitchen equipment operation including ovens stoves steamers food processors knives cleaning supplies and tools
- skilled in basic computer and office equipment use
- skilled in basic math calculations such as adding subtracting multiplying dividing and calculating percentages
- ability to maintain knowledge of safe food handling techniques
- ability to prepare logs and reports
- ability to ensure proper inventory levels
- ability to speak Spanish is desirable
Job Duties
- prepare season cook portion and serve meals and snacks to provide nutritionally balanced meals for patrons
- preserve raw and prepared foods to prevent spoilage and contamination adhering to health guidelines
- clean sanitize and maintain work area kitchen equipment utensils lunchroom dishes and all kitchen and dining areas
- sweep mop dust empty trash restock restrooms and ensure all areas around kitchen and dining area are clean
- plan and prepare daily menu record food served and portioned to patrons daily
- order and conduct inventories of food and food supplies
- manage supplies equipment and kitchen resources
- unload and stock bulk raw food products and supplies
- provide catering and sack lunches for special events and activities as scheduled
