Job Requirements
- Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency and Washington State
- Must be able to obtain and maintain a Washington State Health Card (Food Worker Card)
- Ability to exert up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects
- Ability to stand and/or walk for an entire shift
- Ability to receive detailed information through oral and written communication
Job Qualifications
- Exceptional guest service skills required
- Proficiency with classically taught knife skills (julienne, chiffonade, brunoise, batonnet, etc.)
- Butchery skills preferred but not required
- Familiar with modern cooking techniques (sous vide, combi oven operation, hydrocolloids, etc.)
- Comfortable with constructive criticism and willing to learn and grow
- Must be customer service oriented and have excellent verbal and written communication skills
- Ability to work in a challenging environment dealing with sensitive issues and maintain confidentiality
- Attention to detail and excellent problem solving, organizational, and time management skills
- Ability to maintain professional, courteous, and effective working relationships with all levels of the organization and outside business contacts
- Possess the ability to handle multiple prep or cooking tasks simultaneously in an efficient manner
Job Duties
- Prepare a variety of eggs, meats, seafood, poultry, vegetables and other food items for cooking in broilers, sauté, ovens, grills, fryers and a variety of other kitchen equipment
- Assume 100% responsibility for quality of products served
- Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and approved recipes
- Knows and complies consistently with all kitchen rules, policies and procedures
- Maintain a clean and sanitary workstation while following all food safety, sanitation, and HACCP guidelines when preparing hot and cold foods
- Follow proper plate presentation and garnish set up standards for all dishes
- Assists in all areas of food preparation and production as needed throughout the casino
- Assists with banquets and off-site events as needed
- Opens and closes kitchen properly by following the established opening and closing checklists for kitchen stations
- Work nights, weekends and holidays as required
- Performs other duties as assigned
