Job Requirements

  • Sufficient previous experience in large scale food preparation
  • knowledge of cooking methods and procedures, including types of preparation and related routines

Job Qualifications

  • High School Diploma or GED
  • two years of related experience
  • training in institutional food preparation

Job Duties

  • Review menus and special orders to determine types and quantities of food items to be obtained and prepared
  • follow standardized recipes in preparation of all foods
  • plan cooking schedules with a supervisor and/or dietitian
  • ensure that all foods are prepared to meet existing standards for quality, freshness, taste and appearance
  • confer with dietitians regarding modified diet preparation and use of leftovers
  • adhere to HACCP guidelines in food storage, food handling, food preparation, sanitation and maintenance of work area
  • ensure that all cooking equipment and utensils are inspected and maintained for cleanliness and proper orientation
  • detect and report spoiled or unattractive food, defective supplies and equipment and other unusual conditions
