Job Requirements
- Sufficient previous experience in large scale food preparation
- knowledge of cooking methods and procedures, including types of preparation and related routines
Job Qualifications
- High School Diploma or GED
- two years of related experience
- training in institutional food preparation
Job Duties
- Review menus and special orders to determine types and quantities of food items to be obtained and prepared
- follow standardized recipes in preparation of all foods
- plan cooking schedules with a supervisor and/or dietitian
- ensure that all foods are prepared to meet existing standards for quality, freshness, taste and appearance
- confer with dietitians regarding modified diet preparation and use of leftovers
- adhere to HACCP guidelines in food storage, food handling, food preparation, sanitation and maintenance of work area
- ensure that all cooking equipment and utensils are inspected and maintained for cleanliness and proper orientation
- detect and report spoiled or unattractive food, defective supplies and equipment and other unusual conditions
