Job Requirements
- Sufficient previous experience in large scale food preparation
- Knowledge of cooking methods and procedures, including types of preparation and related routines
- Ability to work varying 8-hour shifts Monday-Friday between 6:00 AM - 8:00 PM with weekend and holiday requirements
- Ability to stand, walk, use hands to manipulate tools, reach with hands and arms, stoop and lift or move objects up to 75 pounds
- Position requires normal or corrected vision
- Ability to follow standard precautions using personal protective equipment as required
Job Qualifications
- High School Diploma or GED
- Two years of related experience
- Training in institutional food preparation
- Prior restaurant kitchen experience
- Knowledge of cooking methods and procedures, including types of preparation and related routines
Job Duties
- Review menus and special orders to determine types and quantities of food items to be obtained and prepared
- Follow standardized recipes in preparation of all foods
- Plan cooking schedules with a supervisor and/or dietitian
- Ensure that all foods are prepared to meet existing standards for quality, freshness, taste and appearance
- Confer with dietitians regarding modified diet preparation and use of leftovers
- Adhere to HACCP guidelines in food storage, food handling, food preparation, sanitation and maintenance of work area
- Ensure that all cooking equipment and utensils are inspected and maintained for cleanliness and proper orientation
- Detect and report spoiled or unattractive food, defective supplies and equipment and other unusual conditions
