Job Requirements
- Ability to perform math calculations

Job Qualifications
- High school diploma
- Two to three years food production experience in an institutional setting
Job Duties
- Review menus and production schedules regularly to determine types and quantities of meats, vegetables, soups, salads, etc. to prepare and plan cooking schedules to meet meal schedules
- Measure, weigh and combine ingredients for quantitative preparation of hot and cold food items in accordance with established recipes
- Cook regular and diet menu items according to established procedures following accurate recipe production
- Ensure menu items are prepared in a timely manner and items requiring advanced preparation are cooked and ready for assigned meal times
- Monitor consumption of assigned menu items and alter food production levels to avoid potential shortages or surpluses
- Organize and oversee work of Food Service Workers preparing meals and ensure food preparation is carried out according to established standards
- Inspect food storage areas and ensure proper storage of foods to prevent spoilage, stock refrigerators, freezers, and cabinets
- Complete and file daily temperature reports and checklists
- Ensure all equipment, counters, utensils, and production areas are maintained in a clean and sanitary condition
- Monitor food inventories and requisition foods as necessary from storerooms
- Perform duties of Food Service Worker as needed
- Assist Sous Chef as required
