Job Requirements
- Current Deschutes County Food Handlers Card or ServSafe Food Handler Certification
- Ability to wear appropriate personal protective equipment (PPE)
- Possession of basic arithmetic skills
- Solid communication skills
- Strong interpersonal and collaborative skills
- Ability to multitask and work independently in patient line pantry and café
- Intermediate knowledge of food safety and handling
- Basic to intermediate computer skills including use of email and MS Office
- Must be able to stand and walk for long periods
- Capability to lift, carry, push, or pull items weighing from 1 to 50 pounds
- Ability to bend, stoop, kneel, crouch, climb stairs, and reach overhead occasionally
- Comfortable working in environments with heat, cold, wet or slippery areas, noise, dust, vibrations, chemical solutions, and uneven surfaces
- Commitment to ethical conduct and compliance with all laws, regulations, and policies.
Job Qualifications
- Two years of previous culinary experience or an associate’s degree in a related culinary field or a culinary certificate with one year of culinary experience
- Excellent organizational skills
- Strong written and oral communication skills
- Customer service skills, particularly in stressful and fast-paced environments
- Basic understanding of food service routines, food safety, and handling
- Ability to use computer applications including electronic mail and MS Office
- Preferred experience includes at least one year of high-volume and line cooking.
Job Duties
- Prepares food items in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment
- Follows recipe cards, production, portion, and presentation standards
- Prepares a wide variety of daily food items for patient room service and café using standard recipes and various cooking techniques such as braising, roasting, sautéing, frying, and grilling
- Completes mise en place and sets up station for breakfast, lunch, and/or dinner service
- Maintains clean and organized work areas, including work surfaces, floors, walls, and equipment in compliance with health and safety standards
- Operates, maintains, and properly cleans kitchen equipment including mixers, blenders, food processors, slicers, knives, ovens, fryers, and grills
- Dates and rotates all food containers following established policies and health department food code guidelines
- Checks pars for shift use, determines necessary preparation, freezer pull, and line setup
- Monitors food inventory to reduce costs and maximize utilization of space
- Returns unused food items to designated storage areas, covering and dating perishables
- Ensures appropriate supply of food items are prepared daily
- Assists in plans and actions to correct food cost issues and control waste
- Implements steps to correct quality issues and monitors customer feedback
- Establishes strong communication with food service caregivers to meet food needs
- Accurately interprets weights, measures, and pricing
- Maintains knowledge of health codes and knife work
- Utilizes computer applications including email and MS Office
- Supports other food service areas including food delivery
- Upholds organizational vision, mission, and values
- Champions continuous improvement and maintains a safe environment
- Conducts activities with professionalism, confidentiality, and compliance
- Delivers customer service that promotes goodwill, is timely, efficient, and accurate
