Job Requirements
- Two years previous culinary experience or associate's degree in a related culinary field or culinary certificate with one year experience
- Current Deschutes County Food Handlers Card or ServSafe Food Handler Certification
- Ability to wear appropriate personal protective equipment
- Basic arithmetic skills
- Solid communication and interpersonal skills
- Ability to multitask and work independently
- Knowledge of food service routines and food safety
- Basic to intermediate computer application skills
- Ability to stand and walk for extended periods
- Ability to lift and carry items weighing 1-50 pounds occasionally
- Ability to bend, stoop, kneel, crouch and climb stairs
- Exposure to heat, cold, wet or slippery areas, noise, dust, vibration and chemicals
- Commitment to professionalism and confidentiality
- Ability to deliver timely and accurate customer service
Job Qualifications
- High school diploma or equivalent preferred
- Current Deschutes County Food Handlers Card or ServSafe Food Handler Certification required
- ServSafe Manager Certification preferred
- Two years previous culinary experience or associate's degree in a related culinary field or culinary certificate with one year experience
- Excellent organizational skills
- Strong written and oral communication skills
- Ability to function well in fast-paced and stressful environments
- High volume and line cooking experience preferred
- Basic to intermediate knowledge of food service routines, food safety, and handling
- Intermediate computer skills including electronic mail and MS Office applications
Job Duties
- Prepares food items in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment
- Follows recipe cards, as well as production, portion, and presentation standards
- Prepares a wide variety of daily food items for patient room service and café utilizing standard recipes, food cooking techniques such as braising, roasting, sautéing, frying and grilling
- Completes mis en place and set-up station for breakfast, lunch, and/or dinner service
- Maintains clean and organized work areas, including work surfaces, floors, walls and equipment in compliance with health standards
- Operates, maintains and properly cleans standard kitchen equipment including commercial mixers, blenders, food processors, slicers, knives, ovens, fryers, grills and other equipment
- Dates all food containers and rotates as per policies, following health department food code guidelines
- Checks pars for shift use, determines necessary preparation, freezer pulls and line set up
- Monitors inventory of food products to reduce overall costs and maximize utilization of space
- Returns unused food items to designated storage areas, covering and dating all perishables
- Assists in correcting food cost problems
- Controls food waste, loss and usage
- Implements steps to correct quality issues and ensure highest quality food items
- Monitors quality and customer feedback
- Maintains strong relationships and communication with food service caregivers
- Accurately interprets weights, measures and pricing
- Maintains basic understanding of health codes and knife work
- Utilizes computer applications, electronic mail and MS Office applications
- Supports vision, mission and values of organization
- Functions as a champion of Lean principles
- Provides and maintains safe environment for caregivers, patients and guests
- Delivers customer service in a timely, efficient and accurate manner
- May perform additional duties of similar complexity as assigned
