Job Requirements

  • High school diploma or equivalent preferred
  • ServSafe Food Safety Certification required
  • Food Handlers permit if required per state regulations
  • Six months experience in large quantity food preparation
  • Experience with therapeutic diet preparation preferred
  • Six months experience in a long term care environment preferred
  • Must be at least 18 years of age
  • Ability to do basic math
  • Ability to read and write at a level appropriate for the job
  • Effective communication skills
  • Ability to work under food safety guidelines

Job Duties

  • Prepares food for regular and therapeutic diets according to a planned menu as requested by the Culinary Manager
  • Prepares alternative items to meet residents' individual needs and food preferences
  • Prepares and/or portions food using proper food handling and food safety techniques per established policies and regulations
  • Makes authorized changes to the planned menu and records changes according to policy
  • Ensures food tastes good and is served attractively and appetizingly
  • Utilizes standardized recipes to prepare menu items
  • Ensures meals and snacks are delivered to designated areas on schedule
  • Maintains proper temperature of food during preparation and service and records temperatures
  • Serves resident meals/snacks accurately according to diet orders and preferences
  • Uses correct portion control utensils during preparation and service
  • Labels, dates, and stores food properly as per policies
  • Monitors refrigerator/freezer temperatures and records discrepancies
  • Washes dishes and kitchen items following established procedures and logs water and sanitizer temperatures
  • Maintains a clean and uncluttered work area during food preparation and service
  • Performs cleaning assignments using proper chemicals and infection control techniques with protective equipment
  • Ensures availability of dishes and kitchen items stored properly to avoid contamination
  • Assists in receiving, storing, and verifying invoices for food and supplies
  • Reports inadequate stock levels timely to Culinary Manager
  • Uses food supplies and equipment efficiently to prevent waste
  • Maintains kitchen security and operates equipment per manufacturer instructions
  • Reports equipment problems promptly
  • Completes tasks within time schedules
  • Recommends improvements to recipes, menus, production, and equipment
  • Works cooperatively with co-workers in all departments
  • Interacts positively with residents, families, and visitors
  • Ensures punctuality and regular attendance for shifts
  • Performs other assigned duties
  • Attends in-service education and applies instruction
  • Assumes Culinary Department responsibilities in absence of Culinary Manager
  • Demonstrates professional conduct and ethics according to Cascadia policies
