Job Requirements
- High school diploma or equivalent
- Five years kitchen experience including two years in a similar role at a premier restaurant, resort, or hotel
- Basic knowledge of hot and cold food preparation
- Proficient knife skills
- Ability to work flexible hours and in a fast-paced environment
- Commitment to safety, health, and sanitation regulations

- Basic hot and cold food cooking knowledge
- Proficient knife skills
- Graduation from an accredited culinary program or apprenticeship is desirable
Job Duties
- Assign tasks to employees with the approval of team leaders
- Prepare cold food sandwiches, salads, and dressings
- Perform basic vegetable prep including slicing, dicing and proper handling
- Prepare and handle meat, fish, vegetables, starches, etc.
- Execute basic hot food preparation
- Utilize frying, grilling, baking, roasting, and poaching techniques
- Prepare sauces including saucier, butter sauces, and all other sauces
- Prepare menu items including soups and sauces as directed
- Cook for the Employee Dining Room including salad bar setup
- Demonstrate proficiency in knife and equipment skills
- Maintain recipe and setup documentation
- Follow recipe cards exactly and assist in preparing new cards
- Work both sides of Stillwater Grill, Tap Room, and banquet stations
- Set up mise en place for the station
- Set up buffet stations and perform designated functions like carving or stir fry
- Time cooking to ensure entrees complete simultaneously
- Check food quality and consistency at the station
- Arrange food on plates with attractive presentation
- Assist with banquet dish up
- Add garnishes to complete plates
- Support other cooks and lines promoting teamwork
- Assist with special events as needed
- Maintain cost consciousness
- Rotate food in coolers, dry storage, and mise en place to ensure freshness and reduce waste
- Keep work areas and refrigerators clean and neat
- Clean and store all equipment and cooking surfaces
- Report faulty equipment or unsafe conditions
- Train new employees including Cook levels 2, 3, and 4
- Collaborate with butcher to ensure consistent product, portions, cuts, and inventory
- Contribute to daily food order list
- Discuss daily events and production schedule with team leaders
- Suggest improvements for food quality and presentation
- Requisition food from Purchasing in absence of team leaders
- Comply with all safety, health, and sanitation policies and procedures
