Job Requirements
- High school diploma or equivalent
- five years kitchen experience including two years in equivalent position at premier restaurant, resort or hotel
- proficient knife skills
- basic knowledge of hot and cold food cooking
- ability to work in fast-paced team environment
- compliance with safety, health and sanitation standards

- graduate of accredited culinary program or apprenticeship desirable
Job Duties
- Assign tasks to employees with the approval of team leaders
- prepare cold food sandwiches, salads, and dressings
- basic vegetable prep including slicing, dicing and proper handling
- prepare and handle meat, fish, vegetables, starches
- basic hot food preparation
- apply frying, grilling, baking, roasting and poaching techniques
- prepare saucier, butter sauces and other sauces
- prepare all necessary menu items including soups and sauces as directed
- cook for employee dining room including salad bar setup
- demonstrate proficiency in knife and equipment skills
- maintain recipe and setup documentation
- follow recipe cards precisely and assist in preparing new cards for specials or new menus
- operate both sides of Stillwater Grill, Tap Room and banquet stations
- set up mise en place and buffet stations
- perform carving, stir fry or other designated station functions
- time cooking to ensure entrees are completed simultaneously
- check quality and consistency of food
- arrange food attractively on plates
- assist with dish up for banquet functions
- add garnishes to complete plates
- support other cooks and lines as needed
- assist with special events
- be cost conscious
- rotate food to ensure freshness and reduce waste
- maintain cleanliness of work areas and refrigerators
- clean and care for all equipment
- report faulty equipment or unsafe conditions
- train new employees in kitchen responsibilities and skills
- collaborate with butcher for consistent product and inventory management
- contribute to daily food order
- discuss daily events and production schedule with team leaders
- suggest improvements in food production and presentation
- requisition food in absence of team leaders
- comply with all safety, health and sanitation policies
