Job Requirements

  • High school diploma or GED
  • Minimum 4 years experience in procurement, food and beverage, culinary or related area or 2-year degree in related field with minimum 2 years experience
  • Ability to manage kitchen utility operations and staff
  • Strong leadership and communication skills
  • Knowledge of sanitation and safety standards
  • Experience with inventory control and loss prevention
  • Capability to recruit, train, and supervise employees
  • Ability to maintain compliance with company policies and applicable laws
  • Capability to handle employee performance and disciplinary procedures
  • Ability to ensure customer satisfaction and service quality
  • Must work full time at Gaylord Opryland Resort & Convention Center
  • Eligible for bonus participation

Job Qualifications

  • High school diploma or GED with 4 years of relevant experience or 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration or related field with 2 years of relevant experience
  • Proven leadership and management experience in food and beverage or culinary operations
  • Strong interpersonal and communication skills
  • Ability to lead, influence, and motivate a team
  • Knowledge of inventory management and loss prevention
  • Understanding of food handling, sanitation, and safety regulations
  • Experience in scheduling and supervising a team
  • Ability to manage budgets and control expenses
  • Proficiency in conducting performance evaluations and disciplinary actions
  • Commitment to delivering exceptional customer service
  • Capability to foster a positive and collaborative work environment
  • Ability to handle multiple responsibilities effectively

Job Duties

  • Manage daily kitchen utility operations including dish room, cleaning, banquet plating, and food running
  • Supervise kitchen employees not involved in cooking such as dishwashers and helpers
  • Order and manage supplies, ensuring staff have necessary equipment, tools, and uniforms
  • Schedule work, events, and activities
  • Monitor inventory of china, glass, silver, food, equipment, and smallware
  • Inspect supplies and work areas for efficiency and compliance
  • Investigate employee accidents and enforce loss prevention policies
  • Ensure proper use and cleaning of equipment and dish room machinery
  • Maintain compliance with food handling, sanitation, and safety standards
  • Communicate relevant information promptly with executives and peers
  • Lead, influence, and encourage kitchen staff demonstrating integrity and sound decision-making
  • Provide leadership and direction to align departmental goals effectively
  • Maintain employee productivity and serve as a role model
  • Achieve performance, budget, and team goals
  • Celebrate successes and build mutual trust and cooperation
