Job Requirements

  • Must be 21 years of age or older
  • Flexible to work all shifts including holidays, nights, weekends and overtime
  • Previous supervisory experience in a full service or high-volume restaurant
  • Ability to write reports, business correspondence and procedure manuals
  • Ability to add, subtract, multiply and divide using whole numbers, fractions and decimals
  • Ability to compute rate, ratio and percent and interpret bar graphs
  • Proficient in Microsoft Outlook
  • Excellent motivational, communication and customer service skills
  • Responsible for staff development and training
  • Responsible for rewards and recognition program
  • Ability to evaluate and provide constructive feedback to employees
  • Skilled in interviewing, hiring and scheduling
  • Ability to determine work procedures and expedite workflow
  • Responsible for employee performance including coaching and counseling

Job Qualifications

  • Bachelor's degree preferred
  • Five years supervisory or managerial experience in a full service or high-volume restaurant required
  • Excellent motivational, communication and customer service skills required
  • Proficient in Microsoft Outlook
  • Ability to write reports, business correspondence and procedure manuals
  • Ability to perform mathematical computations including rates, ratios and percentages
  • Knowledge of food safety and health department standards
  • Experience with staff development, training programs and employee engagement initiatives

Job Duties

  • Administers the overall activation of the back of house restaurant operations
  • Responsible for supervising and managing staff in the F&B BOH department
  • Develops, implements and manages operational goals and monitors achievements of performance and profit objectives
  • Demonstrate a commitment to freshly prepared foods and superior food quality
  • Assists with the proper storage and rotation of all food items
  • Performs routine self-inspections of operations and ensures compliance with health department and quality standards
  • Assists with food cuttings on new products and collaboration with Director of F&B and Purchasing
  • Develop working knowledge of all food outlets, menu preparation and presentation
  • Make determinations regarding types of materials, supplies or tools to be used
  • Create effective and efficient schedules while maintaining labor costs and meeting staffing objectives
  • Assists in the budget process and provides recommendations ensuring compliance to departmental budgets
  • Responsible for staff development and training programs
  • Responsible for rewards and recognition program to maximize employee engagement
  • Maintain cost control methods and procedures by monitoring consistent pars and inventory
  • Maintain established quality assurance procedures to ensure acceptable health department and customer service standards
  • Oversees scheduling, breaks, floor plans, training, evaluating, counseling team members on assigned shift
  • Exhibits a friendly, helpful and courteous manner when dealing with customers and team members
  • Knowledge and enforcement of all gaming laws and regulations applicable to the F&B department
  • Establishes and administers training programs within assigned restaurant and lounge
  • Maintains and instructs personnel on safety policies and procedures
  • Monitors appearance of food served and communicates deviations from standard
  • Ensures compliance with all regulatory requirements within area of responsibility and reports issues to Executive Management
  • Maintains strict confidentiality in all departmental and company matters
  • Performs other related duties as assigned
