Job Requirements
- Graduation from high school or equivalent
- two years cooking experience preparing full course meals in large quantity
- six months supervisory experience
- state approved vocational school coursework in quantity food preparation may substitute for six months experience
- valid California Class C driver’s license
- ability to lift and carry up to 50 pounds
- valid California Food Handler Certificate
- negative tuberculosis test
- physical and mental capacity to work under specified conditions
- ability to work frequent standing and walking
- ability to perform frequent bending and occasional squatting
- ability to communicate effectively
- ability to supervise and train staff and volunteers
Job Qualifications
- Graduation from high school or equivalent
- two years of experience as a cook preparing full course meals in a facility with at least 50 servings per meal
- six months supervisory experience
- state approved vocational coursework in quantity food preparation and sanitation may substitute for six months experience
- graduation from culinary school highly desirable
- knowledge of dietary needs of older adults and portion control
- knowledge of food preparation methods and cooking large quantities
- knowledge of nutritional values and dietary combinations
- knowledge of food purchasing and budgeting
- knowledge of kitchen sanitation and care of equipment
- ability to follow recipes and plan menus
- ability to estimate food quantities and maintain inventories
- ability to prepare food with minimal waste
- ability to communicate effectively orally and in writing
- ability to train and supervise coworkers and volunteers
- possession of a valid California Class C driver’s license
- valid California Food Handler Certificate and negative tuberculosis test
Job Duties
- Plan menus considering food and menu preferences including ethnic and cultural palates
- train and supervise assistant chefs and food service workers and volunteers
- estimate food requirements and requisition food and supplies
- prepare, cook, and serve a wide variety of foodstuffs in quantity
- cut, carve, and cook meats, bake breads, cakes and pastries, peel and prepare vegetables, and make salads
- place food in serving containers and serve food
- maintain proper temperature, rotation, and storage of food
- direct and assist in cleaning of kitchen and kitchen equipment after meals
- oversee cleanliness, sanitation, and proper working condition of kitchen and equipment
- schedule regular maintenance of kitchen equipment
- maintain safety and sanitation standards
- keep records and prepare reports including certifications and medical clearances of staff
- perform other duties as assigned
