Job Requirements

  • high school diploma or equivalent
  • ability to communicate effectively in English
  • minimum three years of professional kitchen experience
  • working knowledge of five basic sauces, soup preparation, food products, cooking temperatures, banquet production and sanitation standards
  • ability to work on feet for long hours
  • ability to lift and move up to 50 pounds
  • ability to work in a hot kitchen environment
  • flexible schedule including weekends, holidays and split shifts
  • proper uniform and personal grooming adherence
  • attendance at training and safety courses
  • physical ability to move quickly and safely in kitchen areas

Job Qualifications

  • high school diploma or equivalent
  • ability to speak, read, write and comprehend English effectively
  • minimum three years of professional cooking experience covering saucier, prep, banquet, pantry and hot line stations
  • knowledge of five basic sauce groups and soup preparations
  • understanding of food products, cooking temperatures and banquet production
  • knowledge of sanitation standards per Health Department
  • proficiency with kitchen equipment and safety features
  • capable of preparing quality food to specification
  • leadership skills for overseeing kitchen personnel
  • effective communication with Executive Chef and team
  • certified or willingness to become Certified Professional Food Manager

Job Duties

  • work a flexible schedule including weekends, holidays and split shifts
  • arrive to work on time consistently
  • maintain proper uniform, hair, and personal grooming standards
  • attend all required training, safety courses, and meetings
  • report and assist with correcting safety hazards
  • consult daily with Executive Chef on menus and specials
  • oversee kitchen personnel to maintain production standards
  • maintain high sanitation and safety standards by training staff
  • ensure all personnel are trained on equipment and safety features
  • manage food and labor costs with Executive Chef
  • exercise portion control over food items served
  • work with line cooks on daily specials and employee meals
  • work in any kitchen area as needed including pantry and dish washing
  • direct utility personnel for cleaning duties
  • manage servers' activities in the kitchen
  • inform servers of menu and specials information
  • ensure security and proper use of kitchen equipment and foods
  • close the kitchen ensuring cleanliness and security of food storage
  • supervise food related events in Executive Chef's absence
  • assist in food inventory and daily maintenance
  • ensure accuracy of payroll in Executive Chef's absence
  • assist in scheduling and maintaining low kitchen labor
  • order all produce
  • become a Certified Professional Food Manager
  • perform duties assigned by Executive Chef or Director of Food and Beverage
