Job Requirements
- Bachelor's degree or equivalent experience
- Minimum three years of culinary management experience
- Knowledge of HACCP standards
- Experience in contract foodservice or fine dining
- Ability to manage inventory and purchasing processes
- Strong understanding of food cost control and sanitation practices
- Availability to work in San Diego, CA
Job Qualifications
- Working knowledge of HACCP
- Minimum three years of culinary management experience in contract foodservice, fine dining, or restaurant settings
- Demonstrated expertise in inventory management and purchasing control
- Extensive knowledge of food trends, sanitation, food cost controls, and presentation
- Experience with exposition cooking
- ServSafe certification is a plus
- Understanding of P&L accountability and contract-managed service experience
Job Duties
- Manage full culinary operations including inventory, ordering and receiving
- Oversee menu development with attention to cost controls and quality
- Implement purchasing and inventory strategies focusing on local food sourcing
- Ensure compliance with food safety standards such as HACCP
- Maintain P&L accountability and manage contract food service operations
- Coordinate food preparation and presentation, including exposition cooking
- Foster sustainability initiatives within culinary practices
