Job Requirements
- Must be able to cook a variety of foods in large quantities
- must be able to read, write, speak and understand the English language
- ability to make independent decisions when necessary
- responsible for overall operation of the department in absence of Director of Dining Services
- ability to deal tactfully with personnel, residents, family members, visitors, government agencies, and public
- knowledge of dining service laws and regulations including JCAHO
- possess leadership ability and willingness to supervise personnel
- ability to plan and implement dining services programs
- maintain supplies and equipment care
- perform regular inspections for sanitation, order, safety and performance
- patience, tact, cheerful disposition and enthusiasm
- willingness to handle residents with varying maturity levels
- ability to incorporate new methods into dining service practices
Job Qualifications
- A minimum of one year dietary experience in a supervisory capacity in a hospital, skilled nursing care facility or related medical field
- knowledge of dining service practices and procedures
- understanding of laws, regulations, and guidelines governing dining services in long-term care including JCAHO
- leadership ability to supervise professional and non-professional personnel
- ability to plan, organize, develop, implement and interpret dining services programs and policies
- strong communication and interpersonal skills
Job Duties
- Follow therapeutic diets ordered by the physician
- ensure the proper serving temperature of food
- provide point of service meal delivery
- maintain visual appeal of the food
- monitor daily nourishments
- follow standardized recipes
- assure that meals are served at the proper time and assure proper portion control
- adhere to sanitation and storage policy and procedure
- demonstrate correct safety techniques
