Job Requirements
- High school diploma or equivalent
- Food safety certification
- Minimum 6 years culinary experience with at least 2 years in a similar position at a premier restaurant, resort, or hotel
- Ability to work in multiple food preparation stations
- Proficient knife skills
- Basic knowledge of hot and cold food cooking
- Ability to maintain high standards for food quality and presentation
- Ability to follow safety, health, and sanitation policies
- Ability to train and lead kitchen staff
- Strong communication skills
Job Qualifications

- Minimum 6 years of culinary experience including 2 years in an equivalent role at a premier restaurant, resort, or hotel
- Food safety certification
- Proficiency in basic hot and cold food cooking
- Skilled in knife use and kitchen equipment
- Knowledge of standards in pantry, Stillwater Bar & Grill, Gallery Café, Tap Room, and banquet operations
- Ability to train and mentor kitchen staff
- Ability to work collaboratively with front and back of house staff
- Graduate of accredited culinary program or apprenticeship desirable
Job Duties
- Assign tasks to employees with team leaders' approval
- Prepare cold food sandwiches, salads, and dressings
- Basic vegetable prep including slicing, dicing, and proper handling
- Prepare and handle meat, fish, vegetables, starches, etc.
- Perform basic hot food preparation including frying, grilling, baking, roasting, and poaching
- Prepare sauces including saucier and butter sauces
- Create menu items such as soups and sauces as directed
- Manage employee dining room cooking and salad bar setup
- Perform basic garde manger duties
- Maintain proficiency in knife and equipment skills
- Keep recipe cards accurate and assist in creating new cards for specials
- Assist in menu reviews and revisions
- Operate stations in Stillwater Grill, Tap Room, and banquet settings
- Set up mise en place and buffet stations, perform designated functions such as carving or stir fry
- Ensure highest standards of culinary quality in food preparation
- Create daily specials before service
- Maintain soup and specials schedules
- Time cooking to complete entrees simultaneously
- Check food quality and consistency
- Arrange food attractively on plates
- Assist with banquet dish up
- Add garnishes to food plates
- Support other kitchen lines and promote teamwork
- Assist with special events as needed
- Manage food cost and minimize waste
- Rotate food stock for freshness
- Keep work areas and refrigerators clean
- Clean and maintain kitchen equipment
- Report faulty equipment or unsafe conditions
- Train new kitchen employees in responsibilities and skills
- Assist in employee evaluations
- Perform month-end inventories
- Collaborate with butcher for consistent product and inventory
- Prepare and submit daily requisitions and food orders
- Communicate daily events and schedules with team leaders
- Suggest improvements for food production and presentation
- Ensure compliance with safety, health, and sanitation policies
