Job Requirements

  • Basic hot and cold food cooking knowledge
  • proficient knife skills
  • 6+ years experience including 2 years in equivalent position at a premier restaurant, resort or hotel
  • food safety certification
  • high school diploma or equivalent
  • ability to work standards of quality and production in pantry, Stillwater Bar and Grill, Gallery Café, Tap Room and banquets

  • 6+ years of culinary experience including 2 years as Chef de Partie or equivalent at premier restaurant, resort, or hotel
  • proficient knife skills

  • ability to work in multiple stations including pantry, Stillwater Bar & Grill, Gallery Café, Tap Room, and banquets
  • strong organizational and communication skills
  • ability to train and lead junior kitchen staff

Job Duties

  • Assign tasks to employees with approval of team leaders
  • prepare cold food sandwiches, salads, and dressings
  • perform basic vegetable prep including slicing and dicing
  • handle preparations of meat, fish, vegetables, and starches
  • execute basic hot food preparation including frying, grilling, baking, roasting, and poaching
  • prepare sauces including saucier, butter sauces, and all other sauces
  • prepare menu items like soups and sauces as directed
  • cook for employee dining room and set up salad bar
  • perform basic garde manager duties
  • demonstrate proficiency in knife and equipment skills
  • maintain recipe cards accurately and assist in preparing new cards for specials or new menus
  • assist in periodic menu reviews and revisions
  • work both sides of Stillwater Grill, Tap Room, and banquet stations
  • set up mise en place for stations
  • set up buffet stations and perform carving, stir fry or other designated functions
  • direct food preparation upholding highest culinary standards
  • create high quality daily specials before service
  • maintain schedules of soups and specials
  • ensure timing of cooking so all entrees complete simultaneously
  • check food quality and consistency
  • arrange food on plates ensuring attractive presentation
  • assist with banquet dish up
  • garnish plates
  • support all other cooks and lines as needed to promote teamwork
  • assist with special events
  • maintain cost consciousness
  • rotate food to ensure freshness and reduce waste
  • keep work areas and refrigerators clean
  • care for and store equipment
  • clean cooking surfaces
  • report faulty equipment or unsafe conditions
  • help train new employees including Cook 1-4 and Demi Chef de Partie
  • assist team leader in employee evaluations
  • assist in month-end inventories
  • work with butcher for consistent product and inventory
  • prepare and submit daily requisitions
  • prepare daily food orders
  • discuss daily events and schedule with team leaders
  • suggest improvements in food production and presentation
  • communicate effectively with front and back of house staff
  • comply with safety, health, and sanitation policies
