Job Requirements
- High school diploma or equivalent
- food safety certification
- minimum 6 years experience including 2 years in equivalent position at premier restaurant, resort or hotel
- proficient knife skills
- knowledge of basic hot and cold food cooking techniques
- ability to work in multiple kitchen stations
- strong communication skills
- able to work under pressure and maintain quality standards

Job Duties
- Assign tasks to employees with approval of team leaders
- prepare cold food sandwiches, salads, and dressings
- perform basic vegetable prep including slicing, dicing, and proper handling
- prepare and handle meat, fish, vegetables, starches, and hot food
- use frying, grilling, baking, roasting, and poaching techniques
- prepare sauces including saucier and butter sauces
- prepare all necessary menu items such as soups and sauces
- assist with employee dining room cooking and set up salad bar
- demonstrate basic garde manger skills
- maintain proficiency in knife and equipment skills
- keep recipe cards accurate and assist in creating new ones for specials or menus
- contribute to periodic menu reviews and revisions
- operate both sides of Stillwater Grill, Tap Room, and banquet stations
- set up mise en place and buffet stations, perform carving or stir fry as designated
- uphold highest culinary quality standards in food preparation
- create high-quality daily specials
- maintain schedules for soups and specials
- time cooking to ensure entrées complete simultaneously
- check quality and consistency of food at station
- arrange food on plates with attractive presentation
- assist with banquet dish up
- add garnishes to plates
- collaborate and support other cooks and lines
- assist special events
- be cost conscious and manage food rotation to reduce waste
- keep work areas and refrigerators clean
- care for and store equipment
- report faulty equipment or unsafe conditions
- train new employees and assist in evaluating staff
- perform month-end inventories
- coordinate with butcher on product consistency and inventory
- prepare and submit daily requisitions and food orders
- discuss daily production and events with team leaders
- suggest improvements to food production and presentation
- communicate effectively with front and back of house
- comply with Pebble Beach Company safety, health, and sanitation policies
