Job Qualifications
- 3 years Ala Carte Service or fine dining knowledge
- good working knowledge of the fundamentals of hot cooking including broiling, frying, sautéing and grilling
- good knowledge of accepted sanitation standards
- knowledge of operating kitchen equipment including stoves, ovens, broilers, slicers, steamers, kettles
- basic mathematical skills for recipes, measurements and portion sizes
- ability to read and write English
- sufficient manual dexterity to use kitchen equipment
- ability to grasp, lift and carry 50 lbs or move goods with hand cart or truck weighing up to 100 lbs
- ability to stand and work continuously
- able to perform duties within extreme temperature ranges

Job Duties
- prepare all foods according to standard recipes to ensure consistency of product to the guest
- visually inspect, select and use food items of the highest quality in the preparation of all menu items
- check and control proper storage of product and portion control, especially high cost meat items
- keep all refrigeration, storage, and working areas clean and in compliance with health department regulations
- ensure all equipment in working areas is clean and in proper working condition
- prepare requisition for supplies and food items for production in work station
- employ math skills to appropriately prepare items according to recipes
- stand for long periods and lift and move products weighing up to 60lbs
- apply hot cooking fundamentals including broiling, frying, sautéing and grilling
- maintain accepted sanitation standards
- operate kitchen equipment such as stoves, ovens, broilers, slicers, steamers, kettles
- understand recipes, measurements, requisition amounts, and portion sizes using basic mathematical skills
- read and write English to complete requisitions, read recipes and communicate with other employees
- use manual dexterity with kitchen tools such as knives, spoons, spatulas, tongs, and slicers
- stand and work continuously in confined spaces
- perform duties within extreme temperature ranges
