Job Qualifications
- At least 3 years ala carte service or fine dining experience
- Good working knowledge of hot cooking methods including broiling, frying, sautéing and grilling
- Knowledge of accepted standards of sanitation
- Experience operating kitchen equipment such as stoves, ovens, broilers, slicers, steamers, kettles
- Basic mathematical skills to understand recipes, measurements, requisition amounts and portion sizes
- Ability to read and write English to complete requisitions, read recipes and communicate with team
- Manual dexterity to use kitchen equipment including knives, spoons, spatulas, tongs, slicers
- Physical stamina to stand for long hours and lift or move products weighing up to 60 pounds
- Ability to perform duties within extreme temperature ranges
Job Duties
- Prepare all foods according to standard recipes to ensure consistency of product to guests
- Visually inspect, select and use food items of the highest quality in preparation of all menu items
- Check and control the proper storage of product and portion control especially high cost meat items
- Keep all refrigeration, storage and working areas clean to comply with health department regulations
- Ensure all equipment in working areas is clean and in proper working condition
- Prepare requisition for supplies and food items for production in workstation
- Employ math skills to appropriately prepare items according to recipes
