Job Requirements

  • Must have previous leadership experience or leadership development program participation
  • minimum of three years experience in a high volume luxury hotel or equivalent
  • capable of running all kitchen operations in absence of Sous Chef
  • able to expedite pass during service managing quality and presentation
  • skilled in leading cooks on dish preparation and presentation
  • able to perform butchering for meat, fish and poultry
  • able to train staff in station setup and cooking techniques
  • able to exert up to 50 pounds of force occasionally and 25 pounds frequently
  • constant standing and walking during shifts

Job Qualifications

  • Previous leadership experience or participation in a leadership development program
  • at least three years’ experience in a high volume luxury hotel or equivalent
  • ability to run all aspects of the kitchen in the absence of a Sous Chef
  • skill in expediting the pass during service and correcting plate issues
  • ability to lead cooks on preparation and presentation of dishes
  • proficient in all butchering needs for meat, fish and poultry
  • capable of training staff on station setup, cooking techniques and cleaning routines

Job Duties

  • Consistently offers professional, engaging and friendly service
  • understand and adjust recipes according to business levels
  • has a working knowledge of properly storing, rotating and maintaining products
  • checks quality and quantities of product on all stations and provides direction to cooks to correct mistakes
  • communicates potential issues to Sous Chef or Chef
  • supports other stations during peak business volume
  • maintains walk-ins and shared areas
  • responsible for delivery logs, temperature logs and other health and safety documentation
  • communicates clearly with strong interpersonal skills
  • supports other culinary departments as needed
  • supervises cooks and provides training
  • motivates the team and inspires others
  • completes all tasks with 100% attention to detail
  • works flexibly in all areas of the kitchen
  • takes on leadership responsibilities proactively
  • delegates tasks and follows up on completion
  • works independently while directing others
