Job Qualifications

  • Three years Ala Carte service or fine dining experience
  • Good working knowledge of hot cooking fundamentals
  • Basic mathematical skills for recipe and portion control
  • Ability to read, write and speak English

  • Ability to stand for long periods and perform physically demanding tasks

  • Experience operating various kitchen equipment
  • Knowledge of health department regulations and sanitation standards

Job Duties

  • Prepare all foods according to standard recipes to ensure consistency of product to the guest
  • Visually inspect, select and use food items of the highest quality in the preparation of all menu items
  • Check and control the proper storage of product and portion control, especially high cost meat items
  • Keep all refrigeration, storage, and working areas in clean, working condition to comply with health department regulations
  • Ensure all equipment in working areas is clean and in proper working condition
  • Prepare requisition for supplies and food items for production in work station
  • Read and employ math skills to appropriately prepare items according to recipes
  • Require stamina for standing and strength for lifting and moving products
  • Maintain knowledge of hot cooking fundamentals including broiling, frying, sautéing and grilling
  • Follow accepted standards of sanitation
  • Operate kitchen equipment such as stoves, ovens, broilers, slicers, steamers, kettles
  • Use basic mathematical skills to understand recipes, measurements, requisition amounts and portion sizes
  • Complete requisitions, read recipes and communicate effectively in English
  • Use manual dexterity to handle kitchen tools such as knives, spoons, spatulas, tongs, slicers
  • Lift or carry up to 50 lbs or move goods on a hand cart/truck weighing up to 100 pounds
  • Stand and work continuously in confined spaces
  • Perform duties within extreme temperature ranges
  • Meet or exceed customer and team expectations
  • Maintain excellent grooming standards and energetic personality
  • Comply with substance-free workplace policies including mandatory testing
