- Food Manager Certification required

Job Duties
- Lead and oversee PM kitchen operations for all restaurant outlets during dinner service
- Ensure consistent execution of approved recipes, plating standards, portion control, and ticket times
- Float between outlets based on volume and operational need, prioritizing high-impact service periods
- Serve as the primary PM escalation point for culinary issues during service
- Ensure all dishes meet established standards for quality, flavor, and presentation during PM service
- Enforce portion control and minimize PM waste, re-fires, and food-related comps
- Monitor PM execution from shared prep kitchens to ensure accuracy, readiness, and proper handoff
- Identify PM food cost risks and trends and communicate them to the Executive Chef and Executive Sous Chef
- Own PM staffing efficiency, labor deployment, and break compliance
- Adjust staffing levels in real time based on business volume and forecast
- Partner with the Executive Sous Chef to reduce PM overtime and labor inefficiencies
- Support and coach PM supervisors and leads to strengthen decision-making during service
- Lead, train, and mentor PM line cooks, leads, and supervisors
- Set clear expectations for professionalism, urgency, cleanliness, and teamwork during PM shifts
- Conduct PM pre-shifts, line checks, and service follow-ups as needed
- Support team engagement and retention by providing structure and clarity on PM expectations
- Maintain strict compliance with health, safety, and sanitation standards during PM operations
- Conduct PM kitchen walk-throughs focused on organization, cleanliness, and readiness
- Immediately address unsafe or non-compliant behaviors observed during service
- Work closely with Front of House leadership to ensure smooth PM service flow and guest satisfaction
- Communicate PM challenges, trends, and wins to the Executive Chef and Executive Sous Chef
- Participate in operational meetings, tastings, and special events as required
