Job Qualifications
- 3+ years culinary leadership experience in a high-volume full-service kitchen
- Previous department head or hotel culinary experience preferred
- Associates degree or higher in Culinary Arts preferred
- Serve Safe certified food manager
- Proven leadership skills with ability to delegate, train, develop, and motivate staff
- Experience mentoring leadership positions including sous chefs and culinary supervisors
- Ability to work effectively under pressure and make quick decisions
- Strong customer service skills with a friendly and approachable demeanor
- Ability to teach staff guest interaction and problem resolution
- Skilled in producing high volume work while maintaining Omni quality standards
- Excellent verbal and written communication skills in English
- Comprehensive knowledge of food handling and presentation
- Creative and knowledgeable about current food trends
- Computer proficiency including Microsoft Office and payroll software
- Basic math skills and ability to understand financial reports
- Experience managing payroll and staff scheduling

Job Duties
- Plan, evaluate, organize, hire, and direct culinary team including sous chefs and line cooks
- Ensure adherence to all policies, procedures, and guidelines by department personnel
- Provide training, motivation, and leadership to department staff
- Manage food and labor costs efficiently
- Oversee equipment maintenance and safety in all food service areas
- Train staff on cooking techniques, food safety, and kitchen organization
- Monitor inventory and usage of china, glass, and silverware
- Perform administrative duties essential for department operation
- Maintain cleanliness and organization of all coolers, freezers, and storage areas
- Control food safety and sanitation protocols throughout the kitchen
- Communicate effectively with food and beverage managers and director
- Oversee and participate in food production
- Expedite and perform station or line cook functions as needed
- Prepare daily production lists and delegate duties
- Manage production of sauces, stocks, dressings, and butchery items
- Check mise en place and quality at each station prior to service
- Stay current on industry trends and culinary knowledge
- Develop recipes, conduct food cost analyses, and plan menus across meal periods
- Write and execute special event menus within budget
- Oversee quality staff meals and proper food rotation
- Ensure compliance with health department and corporate safety standards
- Collaborate with other hotel managers to maintain smooth operations
- Maintain a positive and motivating kitchen environment
- Set priorities and provide feedback to enhance team performance
- Forecast workflow and analyze personnel needs
- Manage department payroll weekly
