Job Requirements

  • Culinary degree or relevant experience
  • Minimum 4 years in culinary management
  • Experience managing multi-unit food operations
  • Knowledge of food safety regulations
  • Strong leadership and communication skills
  • Ability to work flexible hours including weekends and blackout days
  • ServSafe Certification required

Job Qualifications

  • Ability to communicate effectively with diverse individuals
  • Knowledge of food safety and sanitation, food products, and service equipment
  • Degree from an accredited culinary institute preferred but not required
  • Bachelor's degree preferred
  • 4-7 years executive-level culinary management experience required
  • Minimum 2-3 years culinary management experience in a multi-unit setting required
  • ServSafe Certification
  • Passion for food trends, flavors, innovation, and recipe development

Job Duties

  • Focus on food safety using Marko audits to ensure kitchen compliance
  • Solely responsible for menu planning ensuring menus are complete 4-6 weeks out and within budgeted cost per meal
  • Ensure accurate weekly inventory and manage food cost results and trends
  • Lead training and development of new hires and delegate training tasks
  • Ensure checklist compliance for sanitation and standards
  • Work with Café Manager and Director to hold team accountable to standards and coach staff
  • Delegate and follow up on daily and weekly cleaning
  • Available to work all shifts and blackout days
  • Communicate with management to address people, product, or maintenance issues
  • Ensure food offerings align with HTCG's core pillars and menu commitments
  • Implement and monitor menu and inventory management including cost control and loss prevention
  • Ensure full compliance with operational excellence fundamentals including waste management and labor standards
