Job Requirements
- Culinary degree or relevant experience
- Minimum 4 years in culinary management
- Experience managing multi-unit food operations
- Knowledge of food safety regulations
- Strong leadership and communication skills
- Ability to work flexible hours including weekends and blackout days
- ServSafe Certification required
Job Qualifications
- Ability to communicate effectively with diverse individuals
- Knowledge of food safety and sanitation, food products, and service equipment
- Degree from an accredited culinary institute preferred but not required
- Bachelor's degree preferred
- 4-7 years executive-level culinary management experience required
- Minimum 2-3 years culinary management experience in a multi-unit setting required
- ServSafe Certification
- Passion for food trends, flavors, innovation, and recipe development
Job Duties
- Focus on food safety using Marko audits to ensure kitchen compliance
- Solely responsible for menu planning ensuring menus are complete 4-6 weeks out and within budgeted cost per meal
- Ensure accurate weekly inventory and manage food cost results and trends
- Lead training and development of new hires and delegate training tasks
- Ensure checklist compliance for sanitation and standards
- Work with Café Manager and Director to hold team accountable to standards and coach staff
- Delegate and follow up on daily and weekly cleaning
- Available to work all shifts and blackout days
- Communicate with management to address people, product, or maintenance issues
- Ensure food offerings align with HTCG's core pillars and menu commitments
- Implement and monitor menu and inventory management including cost control and loss prevention
- Ensure full compliance with operational excellence fundamentals including waste management and labor standards
