Job Requirements
- Must be 21 years of age
- Proof of authorization and eligibility to work in the United States
- Able to obtain and maintain health and other certifications as required
- Able to lift or carry 50 pounds unassisted
- Physically able to access all areas of the property
- Maintain composure under pressure and meet deadlines
- Ability to interact effectively with guests, management, and team members
- Able to walk, stand, stretch, bend, and kneel for prolonged periods
- Able to work in a fast-paced and busy environment
- Able to work indoors exposed to noise, dust, and cigarette smoke
- Maintain food costs within budget
- Provide management and support to kitchen staff
- Sufficiently staff kitchen according to business levels
- Meet departmental appearance and quality standards
- Must be able to work varied shifts
Job Qualifications
- High school diploma or equivalent
- Preferably an Associate degree in Food & Beverage or completion of a Culinary Institute
- Minimum 5 years experience including high volume and VIP presentations
- Minimum 5 years supervisory experience
- Knowledge of soup, sauces, meat, fish, poultry, casserole, and vegetable preparations
- Ability to read, translate, and execute recipes
- Advanced knife skills
- Excellent knowledge of basic and large production kitchen equipment
- Knowledgeable in proper food handling and sanitation practices
- Strong interpersonal and communication skills
- Ability to work varied shifts including nights, weekends, and holidays
Job Duties
- Ensure food quality, presentation, and preparation of menu items according to hotel standards
- Regularly order and restock kitchen supplies and food items
- Ensure all products rotate on first in, first-out basis while maintaining par levels
- Produce production list for efficient execution of service
- Process and place requisitions properly
- Complete food orders, verify delivery, and notify warehouse of discrepancies
- Coordinate with support departments for acquisition of goods and services
- Manage and support kitchen staff to ensure daily operational efficiency
- Check daily food cost reports
- Regularly review finished products for quality before leaving the kitchen
- Attend and participate in meetings and departmental hearings
- Participate in food prep and delegate daily assignments
- Handle supplies safely while maintaining hygiene and cleanliness
- Review and approve daily payroll sheets
- Communicate effectively with management and cooks to address guest or employee needs
- Maintain food costs within budget
- Conduct training for all cooks on responsibilities
- Work knowledgeably at each kitchen station
- Prepare hot and cold items
- Create, read, measure, and execute recipes
- Manage staffing schedules to meet business needs
- Issue discipline according to HR policies
- Follow health, sanitation, and safety regulations
- Mentor and provide leadership to the team
- Handle constructive criticism and continue professional growth
- Maintain professional and respectful communication with team members
- Provide discipline when needed
- Maintain consistent attendance
- Perform other related duties as assigned
