Job Requirements

  • possession of valid drivers license and gaming license or ability to obtain and maintain
  • must successfully pass background check
  • must successfully pass alcohol and drug screening
  • must be 21 years of age
  • degree from certified food service program, apprenticeship, culinary school or equivalent
  • minimum five years previous industry experience with three years as sous chef or equivalent
  • demonstrated supervisory experience
  • computer literacy including Excel and Word
  • ability to multi-task and meet deadlines

  • ability to calculate, analyze and troubleshoot P&L
  • expertise in performing all kitchen positions

Job Duties

  • provide direct and general supervision to culinary team
  • direct daily execution of assigned kitchen’s food production and service
  • establish and maintain standards for food quality, timeliness, cleanliness, maintenance, and profitability
  • ensure compliance with health department regulations
  • staff, schedule, evaluate, train, develop, and monitor culinary team
  • recommend wage increases, promotions, demotions, and discipline actions
  • oversee cooking operations including preparation methods, portion control, and presentation
  • assist Executive Chef in budget and labor schedule development
  • implement policies and procedures promoting compliance
  • ensure communication between front of house and back of house
  • conduct quality checks and inventory monitoring
  • manage food and labor costs
  • participate in long-range planning including menu development and renovations
  • write and cost recipes
  • perform purchasing and menu changes abiding by corporate standards
  • perform other duties as assigned by management
