Job Requirements
- Possession of and ability to obtain and maintain a gaming license within assigned state
- must successfully pass background check
- must successfully pass alcohol and drug screening
- must be 21 years of age
- minimum of 5 years experience in high-volume banquet kitchen
- minimum of 2 years supervisory experience
- ability to work flexible hours

- demonstrated culinary expertise
Job Qualifications
- Degree from certified food service program, apprenticeship, culinary school or equivalent preferred
- minimum of 5 years experience in a high-volume banquet kitchen
- minimum of 2 years experience as a Sous Chef or Chef de Partie or equivalent
- excellent food technique and cultural knowledge
- ability to adapt to market conditions with creativity
- advanced butchery knowledge
- excellent verbal and written communication skills
- strong problem-solving ability
- excellent organizational skills
- computer literacy with Excel and Word
- ability to multi-task and meet deadlines
- ability to calculate, analyze and troubleshoot P&L
- demonstrated supervisory experience
- ability to perform all kitchen positions
Job Duties
- Provide direct and general supervision to culinary team
- direct the daily execution of all assigned kitchen's food production and service execution
- establish and maintain standards of operation in food quality, timeliness, cleanliness and maintenance, profitability and staff supervision
- ensure compliance with health department regulations
- staff, schedule, evaluate, train, develop and monitor culinary team
- recommend wage increases, promotions, demotions, discipline and employment actions
- oversee cooking operations including preparation methods, portion control, timeliness of food delivery and garnishing
- coordinate communication between front of house and back of house operations
- meet daily deadlines for specials and prep reports
- ensure periodic quality and temperature checks
- oversee weekly sales monitoring and adjust production levels
- assist in banquet menu development and execution
- supervise kitchen staff workflow and timely service
- work with event planners and catering managers
- review banquet event orders and prepare prep sheets
- maintain inventory control and ordering
- plan and manage banquet food quantities and plating
- open and close work area ensuring cleanliness and security
- ensure daily line checks
- oversee station stocking and setup
- conduct kitchen walkthroughs for quality and cleanliness
- maintain kitchen equipment
- manage food and labor costs
- verify inventories and menu pricing
- participate in long-range planning
- research and explain line-item variances
- write and cost recipes
- perform purchasing and menu changes per corporate standards
- perform other duties as assigned
