  • Culinary degree or related training equivalent in hospitality or restaurant industry
  • minimum of 3 years of relevant work experience in a similar scope and title
  • experience within luxury brand or markets preferred
  • food safety manager certification preferred or attained within 30 days

Job Duties

  • Maintain a file of recipes including ingredients, portions, and preparation directions
  • set standards and methods for portion control
  • meet budgets for food, labor, and direct operating expenses
  • cost all food items and assist in monthly financial reporting
  • create kitchen labor schedules meeting Peak Performance criteria
  • assist in creating seasonal, monthly, and weekly specials and menus
  • monitor execution procedures to ensure quality, consistency, efficiency, and professionalism
  • conduct hands-on teaching and training for kitchen staff
  • train and educate staff on new menu items and procedural changes
  • hire, coach, counsel, and conduct performance evaluations for culinary team members
  • develop, train, and mentor Sous Chefs, Supervisors, and cooks
  • implement and maintain sanitation practices and protocols
  • collaborate with management on menu development, staff training, and photo shoots
  • create and monitor kitchen inventory including order inspections and item selection
