Job Requirements

  • At least 3-5 years of kitchen management experience
  • Experience in steakhouse or fine dining
  • Valid driver’s license with clean driving record for last 3 years
  • Ability to work days, nights, weekends, and holidays
  • Ability to stand for long periods
  • Strong organizational and leadership skills
  • Willingness to foster positive team culture

Job Qualifications

  • Minimum 3-5 years of kitchen management experience preferably in a Chef de Cuisine role
  • Background in steakhouse or fine dining culinary operations
  • Experience in upscale restaurant or golf/country club settings preferred
  • Proven leadership abilities with team-building and staff development skills
  • Strong knowledge of food preparation, presentation, and safety standards
  • Ability to manage cost controls including ordering and inventory
  • Excellent communication and interpersonal skills
  • Valid driver’s license with clean driving record

Job Duties

  • Directly manage, train, coach, and develop culinary and stewarding staff ensuring all procedures are completed to department standards
  • Develop and embrace a positive, professional and energized culture focused on creating memorable experiences for members and guests
  • Oversee all day-to-day culinary operations of the kitchen
  • Assign and coordinate daily production and prep work for culinary staff along with cleaning checklists
  • Maintain strong emphasis on food quality, presentation and consistency according to recipes and standards
  • Source and order product respecting property procedures, business volume, and food cost guidelines
  • Prepare schedules and reports timely while maintaining efficient staffing levels to avoid unnecessary overtime
  • Conduct staff reviews, disciplinary actions, and performance improvement plans alongside Director of Culinary and HR
  • Conduct daily line-ups, monthly meetings, and attend all scheduled meetings
  • Collaborate with Director of Culinary on menu development, portion control, and costing
  • Execute costing, plating guides, and menu descriptions for all menu items
  • Maintain knowledge on food trends and execute them according to specifications
  • Ensure cleanliness, equipment maintenance and safe working environment per DMC and Health Department policies
  • Perform monthly inventory and oversee strict food storage guidelines
  • Assist Executive Steward with equipment needs and storage care
  • Oversee events execution with banquets and catering teams
  • Build and maintain strong member relationships through service and recognition
  • Manage employee meal program ensuring appealing, healthful food
  • Inspect cleanliness and organization of service areas and work stations
  • Perform other duties assigned by Director of Culinary
