Job Requirements

  • Culinary diploma or higher
  • Minimum 10 years culinary experience
  • At least 2 years in senior management
  • Ability to stand for extended periods
  • Ability to walk up and down stairs multiple times per day
  • Ability to lift, push, and pull at least 30 lbs
  • Willingness to work indoors and outdoors in varying weather conditions

Job Qualifications

  • Culinary diploma from a recognized institution or higher
  • At least 10 years of culinary experience with minimum 2 years in senior management
  • Strong food and beverage knowledge
  • Hands-on operational management approach
  • Creative and innovative culinary skills
  • Excellent communication and computer skills
  • Effective training and coaching abilities
  • Fair and firm management skills with high influence
  • Strong administrative capabilities

Job Duties

  • Prepare or supervise kitchen staff in daily preparation of soups, sauces, and specials to ensure adherence to standardized recipes
  • Assist Executive Chef with monthly inventory, pricing, cost controls, requisitioning, and issuing food supplies
  • Assume complete charge of kitchen in Executive Chef's absence
  • Supervise and train kitchen employees in sanitation, safety, menu planning, and production activities
  • Maintain food quality, cost, presentation, and flavor standards
  • Control food and payroll costs to maximize profitability
  • Coordinate buffet presentation and inspect food quality before service
  • Expedite food orders during peak service hours
  • Consult with dining room management during daily line-ups
  • Monitor kitchen staff time and attendance to ensure schedule compliance
  • Handle member and guest complaints and assist in resolution
  • Prepare reports, schedules, and cost menus as assigned
