Job Requirements

  • Post high school education preferred
  • culinary education desirable

  • compliance with safety and sanitation standards

Job Qualifications

  • Two or more years of post high school education, culinary education is desirable
  • five or more years of experience in a related position
  • advanced knowledge of food profession principles and practices including management of people and complex problems
  • knowledge of hotel operations including marketing, security, personnel and labor relations, budget forecasting, quality assurance, and hospitality law
  • leadership skills to motivate and develop staff
  • ability to work effectively under time constraints and deadlines
  • effective verbal and written communication skills with ability to adapt communication style to different audiences

Job Duties

  • Manage the daily production, preparation and presentation of all food for the hotel including restaurant(s) and room service to ensure consistent quality
  • manage human resources in kitchen production and preparation areas including hiring, scheduling, training, developing and counseling staff
  • schedule and manage the maintenance and sanitation of the kitchen, equipment and related areas to ensure compliance with health and safety standards
  • monitor, analyze and control labor and food costs
  • prepare reports, charts and schedules to ensure budgets are met or exceeded
  • promote the accident prevention program to minimize liabilities
  • assist the Executive Chef in creation, costing and implementation of seasonal and special menus
  • assume responsibilities of the Executive Chef in his or her absence
  • comply with attendance rules and be available to work regularly
  • perform other job-related duties as assigned
