Job Requirements

  • culinary degree or 7-10 years professional culinary experience in scratch cooking food production
  • menu creation and teaching ability
  • extensive culinary experience in multiple cuisines
  • vendor management experience preferred
  • strong communication and leadership skills
  • current Food Handler's Certificate required

Job Qualifications

  • culinary degree or equivalent professional culinary experience
  • at least 3 years professional culinary experience in established scratch cooking food production
  • menu creation skills
  • ability to teach cooking techniques, regional cuisines and culinary skills
  • extensive experience in a multitude of cuisines, preferably classically trained
  • strong communication skills
  • strong leadership skills
  • vendor management experience preferred
  • purchasing and costing experience preferred

Job Duties

  • Create and implement vision for service excellence in dining
  • manage and improve resident and family satisfaction and loyalty within dining program
  • identify, benchmark and leverage best practices of customer experiences within dining program
  • develop and maintain effective relationships and two-way communication with residents and families
  • create and prepare high-quality meals using fresh quality ingredients and scratch-made recipes consistent with local customs and tastes
  • demonstrate senior culinary leadership using advanced cooking techniques, diverse cuisines and new cooking equipment
  • create seasonal menus that align with regional preferences promoting choice and options
  • supervise culinary department operations daily and inform Food and Beverage Director of key operational changes
  • take full responsibility and supervision of culinary team including cooks and production associates
  • maintain kitchens, storerooms and scullery in clean sanitary condition per state health code
  • serve as morning or evening cook as needed
  • maintain inventory control of kitchen wares, equipment and supplies
  • ensure safe working conditions of all food service equipment
  • purchase all food and non-food supplies from approved vendors using local artisan vendors where possible
  • directly supervise cooks and utility workers
