Job Requirements
- minimum 2 years of high volume kitchen management experience
- culinary degree or equivalent education and work experience
- supervisory experience in food and beverage operations preferred
- experience in employee coaching, counseling, and documentation
- knowledge of food safety and workplace safety procedures
- experience in purchasing, receiving, and inventory control
- Serve Safe Certification and Allergy Awareness Training preferred
- ability to work extended hours including nights and weekends
- physical ability to stand, walk, bend, and lift up to 50 pounds
- proficiency with computer technology and hotel-related systems
Job Qualifications
- minimum 2 years of high volume kitchen management
- culinary degree desirable or equivalent combination of education and work experience
- previous supervisory experience in food and beverage operations preferred
- experience coaching and counseling employees with documentation
- knowledge of food safety procedures and workplace safety procedures
- experience with purchasing, receiving, and inventory control
- Serve Safe Certification and Allergy Awareness Training strongly preferred
- strong culinary and cooking skills including various cooking techniques
- proficiency in food cost analysis and labor control
- knowledge of kitchen equipment use and operation
- strong knife, grill, broiler, sauté, expediter, and garde manger skills
- good financial understanding of food costs and waste minimization
Job Duties
- prepare high-quality meals according to company standards and menu specifications
- oversee kitchen staff in the preparation and production of all meal periods
- maintain and adhere to health and food safety programs per state and federal regulations
- manage kitchen systems including preparation logs, inventories, product usage, and PMIX reporting
- develop and implement training and administrative programs for staff
- control food and labor costs to ensure financial prudency
- program menus for all meal periods
- maintain health and safety standards in the absence of the Executive Chef
- lead and cultivate a cohesive, motivated kitchen team that consistently produces high-quality food
