Job Requirements
- Ability to walk, stand, and bend for extended periods
- Able to lift 30 plus pounds
- Availability to work nights, weekends, holidays, and variable schedules
- Minimum 3 years experience in a Chef de Cuisine role or 1 year in kitchen management for tier 2
- Experience leading teams of 15 or more for tier 2
- Strong safety protocols understanding
- Ability to maintain stringent compliance with health and safety guidelines
- Capability to manage high-volume kitchen operations
- Strong communication and organizational skills
Job Qualifications
- 3 years plus experience as a Chef de Cuisine or similar role
- Experience overseeing annual food sales revenue of 3 million dollars or more
- Proven leadership of a team of 30 or more personnel
- Demonstrated ability executing high-volume elevated cuisines
- Culinary degree or equivalent certification
- Strong knife handling and safety skills
- Experience directing subordinate managers
- Knowledge of Department of Health compliance
- Ability to maintain high morale and motivation in a team
- Ability to adapt menus for seasonal variations
Job Duties
- Provide comprehensive leadership and management to all kitchen staff and operations
- Maintain strict adherence to company policies and standards
- Hire, onboard, and train all kitchen personnel
- Complete daily operational reports and checklists
- Conduct training sessions in line with company protocols
- Perform daily Department of Health walkthroughs and enforce sanitary practices
- Manage staffing schedules and labor budgets
- Master menu item knowledge and adhere to recipe specifications
- Monitor feedback logs and address food-related concerns promptly
- Ensure compliance with Department of Health food service standards
- Enforce company uniform and hygiene policies
- Supervise maintenance and cleanliness of kitchen areas
- Conduct weekly inventory assessments
- Manage vendor relationships and place orders
- Oversee food receiving and storage procedures
- Conduct weekly meetings with corporate and events teams
