Job Requirements
- Minimum high school diploma or equivalent
- At least 2 years of high volume kitchen management experience
- Culinary degree or equivalent education preferred
- Experience in food and beverage supervisory roles
- Serve Safe Certification highly preferred
- Ability to work flexible hours including nights and weekends
- Physical ability to perform demanding tasks including standing, walking, bending and lifting up to 50 pounds
- Reliable communication skills
- Capability to work under pressure and maintain composure
- Knowledge of health and food safety regulations
- Skilled in computer use including MS Word and Excel
- Strong leadership and interpersonal skills
Job Qualifications
- Minimum 2 years of high volume kitchen management
- Experience in catering, banquet operations, or supervisory roles in food and beverage preferred
- Culinary degree or equivalent combination of education and work experience desirable
- Proven experience with employee coaching, counseling and documentation
- Knowledge of establishing and enforcing food safety and workplace safety procedures
- Skills in purchasing, receiving, and inventory control
- Serve Safe Certification and Allergy Awareness Training preferred
- Strong culinary and cooking skills with knowledge of different cooking styles
- Proficient in food cost analysis, inventory, and labor control
- Familiarity with kitchen equipment use and operation
- Knife skills, grill, broiler, sauté, expediter skills
- Financial understanding to minimize kitchen waste
- Ability to lead, mentor and communicate effectively
- Strong organizational and problem-solving skills
- Experience in training and developing staff
Job Duties
- Prepare high-quality meals according to company standards, menu specifications and production schedules
- Oversee kitchen staff in preparation and production during all meal periods
- Maintain and adhere to health and food safety programs per state and federal regulations
- Manage kitchen systems including preparation logs, inventories, product usage and PMIX reporting
- Develop and administer training programs for staff development
- Manage food and labor costs to ensure financial prudency
- Program and design menus for all meal periods
- Ensure health and safety standards are maintained in the absence of the Executive Chef
- Foster a cohesive staff culture that produces high-quality food promoting profitability and positivity
