Job Requirements
- At least high school diploma or equivalent
- Minimum of 3 years experience in a professional kitchen setting
- Culinary degree or certification preferred
- Strong leadership and team management skills
- Knowledge of health and safety regulations in food service
- Excellent organizational and multitasking abilities
- Ability to work flexible hours including weekends and holidays
- Physical ability to stand for extended periods and lift up to 50 pounds
- Strong communication and interpersonal skills
- Ability to handle guest complaints professionally and promptly
- Commitment to quality and consistency in food production
- Ability to train and develop kitchen staff
- Familiarity with inventory and cost control procedures
Job Qualifications
- At least 5 years of related progressive experience or a culinary graduate with at least 3 years of progressive experience in a hotel or related field
- Knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations
- Ability to work long hours
- Ability to exert up to 50 pounds of force occasionally and/or 20 pounds frequently to move objects
- Maintain a warm and friendly demeanor
- Effective verbal and written communication skills
- Ability to listen and clarify concerns raised by employees and guests
- Ability to multitask and prioritize departmental functions
- Friendly, courteous, and service-oriented attitude
- Attendance at all required meetings and trainings
- Ability to participate in M.O.D. coverage
- Regular attendance as required by scheduling

Job Duties
- Work with other F&B managers and keep them informed of F&B issues as they arise
- Keep immediate supervisor fully informed of all problems or matters requiring his/her attention
- Coordinate and monitor all phases of loss prevention in kitchen areas
- Prepare and submit required reports in a timely manner
- Monitor quality of all food product and presentation
- Ensure preparation of required reports including wage progress, payroll, revenue, employee schedules, quarterly action plans
- Oversee all aspects of daily kitchen and food production operations
- Make cooks aware of daily forecasts and customer counts
- Respond to guest complaints promptly
- Ensure compliance with SOPs and requisition procedures
- Attend all meetings as required
- Conduct staff performance reviews
- Implement and monitor corporate promotions
- Enforce local health department sanitation laws
- Collaborate with Executive Chef and Director of F&B on menu creation
- Design and oversee cafeteria operations
- Assess food portion size, visual appeal, taste, and temperature
- Check stations for food storage and sanitation
- Review and approve weekly payroll
- Monitor food purchases for quality and price
- Oversee daily activities including preparation, sanitation, inventories, logs, and reports
- Prepare daily food production sheets
- Cut meat, poultry, and seafood as needed
- Perform additional duties as assigned by management
