Job Requirements
- High school diploma or equivalent
- five years of cooking experience in professional kitchens
- previous culinary management experience
- knowledge of food safety and sanitation standards
- ability to lift and move 50 pounds
- ability to work on feet for long hours
- ability to work flexible schedules including weekends and holidays
- effective communication skills in English
- ability to follow safety procedures and handle cleaning chemicals
- commitment to maintaining kitchen appearance and hygiene
- willingness to attend training and meetings
Job Qualifications
- High school diploma or equivalent
- five years of cooking experience in a professional kitchen including saucier, prep, banquet, pantry, and hot line
- previous culinary management experience
- working knowledge of basic sauce groups, soup preparations, and cooking temperatures
- understanding of kitchen equipment and safety features
- knowledge of ordering, inventory, and cost control
- ability to communicate effectively in English
- experience with menu development is a plus
- ability to maintain high sanitation and safety standards
- certified or willing to become a Certified Professional Food Manager
Job Duties
- Work a flexible schedule including weekends, holidays, and split shifts
- arrive to work on time consistently
- ensure staff is in proper uniform
- maintain personal grooming standards
- attend all required training and office meetings
- report and follow up on safety hazards
- consult with Executive Chef on menus
- oversee kitchen staff production standards
- maintain high sanitation and safety standards
- train staff on equipment safety and chemical usage
- manage food and labor costs
- exercise portion control for specials and employee meals
- assist in all kitchen areas as assigned
- direct utility staff cleaning
- supervise server activities in the kitchen
- inform servers of menu details
- secure kitchen equipment and food
- close kitchen ensuring cleanliness and security
- supervise food-related events ensuring quality and cost control
- assist in food inventory counts
- schedule kitchen staff to maintain low labor costs
- order produce, fish, meat, and poultry
- become a Certified Professional Food Manager
- manage Material Safety Data Sheets and labeling
- perform other tasks as assigned by the Executive Chef
