Job Requirements

  • High school diploma or GED
  • ten years of culinary experience including three years in sushi
  • five years supervisory or sous chef experience
  • current within six months
  • food safety and sanitation certifications
  • HACCP certification
  • strong organizational and communication skills
  • computer proficiency with MS Excel, MS Word, and email

Job Qualifications

  • High school diploma or GED
  • ten years of culinary experience with at least three years in sushi preparation
  • five years of supervisory or sous chef experience
  • current culinary experience within six months of application
  • extensive knowledge of western and eastern menu development and sushi trends
  • thorough knowledge of food products, recipes, and presentation
  • food safety and sanitation certifications as required by federal, state, and local regulations
  • proven knowledge of proper food handling procedures
  • HACCP certification
  • strong organizational and communication skills
  • computer proficiency including MS Excel, MS Word, and email

Job Duties

  • Controls food and labor costs while maximizing guest satisfaction
  • conduct pre-shift meetings and inform staff of specials, upcoming events, etc.
  • enforce safety and sanitation procedures throughout the kitchen according to company procedures
  • develop and implement menu recipes, controls, portion, and presentation specifications
  • maintain and ensure compliance with all policies and procedures
  • oversee daily kitchen operations including facility inspections, delegating responsibilities, and communicating facility needs
  • determine production needs and delegate tasks to Sous Chefs overseeing their completion
  • assess hiring needs and coordinate with Human Resources and Executive Sous Chef
  • administer outlet operations including reporting, log entries, team evaluations, and attendance monitoring
  • develop training plans and ensure staff are trained on food preparation, health, safety, and quality standards
  • monitor employee training and performance, provide coaching and leadership development
  • manage ordering, product specifications, quality control, and monthly inventory
  • maintain cost and waste control
  • perform other duties as assigned
