Job Requirements
- Must be able to work in an alcohol and smoking environment
- Ability to secure and maintain licensure as required by Louisiana Gaming Control Board or applicable regulatory entity
- Ability to stand for long periods without sitting or leaning
- Capability to handle physically demanding tasks including lifting up to 50 pounds
- Must be able to walk continually throughout scheduled shifts
- Ability to bend, stoop, and reach as needed during food preparation
- Scheduled workdays and times may vary based on business need
- Willingness to travel as required
Job Qualifications
- A four-year degree in a related field or equivalent work experience
- Three to five years experience as a Kitchen or Restaurant Supervisor and/or Sous Chef
- Knowledge of Alcohol Beverage Control regulations, Health Department standards, and OSHA requirements
- Ability to supervise and lead a kitchen team
- Strong communication skills to interact with management and guests
- Proven problem-solving skills
- Experience working in a fast-paced, interruptive office environment
Job Duties
- Development and management of the budget and food cost percentage
- Trains kitchen personnel in safe operating procedures of all equipment, utensils, and machinery
- Establishes maintenance schedules following manufacturer instructions for all kitchen equipment
- Acts as the creative manager in determining menu and food offerings
- Develops staff through interviewing, performance management, and disciplinary counseling
- Manages preparation of all menu items catering to special dietary requests including low-fat, sodium, vegetarian, and low-calorie meals
- Controls food costs and sets purchasing specifications for food and beverage offerings
- Implements programs to reduce loss time injuries
- Plans food plating to maximize visual appeal and minimize waste
- Performs other duties as assigned
