Job Requirements
- Associate's degree in culinary arts, baking and pastry, culinary management or related field required
- must hold a current Certified Food Protection Manager (CFPM) Certification
- must be able to communicate clearly with managers and kitchen personnel
- actively supervises, motivates and corrects employee performance
- selects and trains all new kitchen staff
- must be able to work well with limited supervision
- bilingual (English-Spanish) preferred
- must be committed to maintaining food and beverage knowledge and quality service
- must have cooking and production experience
- must be aware of local, state and federal health and sanitation laws including National School Lunch Program (NSLP) regulations
- must have basic computer skills including but not limited to Microsoft Excel and Microsoft Word
- must be able to speak, read and understand basic cooking directions
- must be able to use basic math including addition, subtraction, multiplication and division

- knowledge of local, state and federal health and sanitation laws including National School Lunch Program (NSLP) regulations

- bilingual (English-Spanish) preferred
Job Duties
- Ensures that all recipes and prepared meals meet the district's specifications and commitment to quality
- maintains a safe, orderly and sanitized kitchen by using proper food-handling techniques
- prepares daily production sheets
- prepares monthly inventory
- rotates daily par stock using the first-in, first-out (FIFO) method
- maintains daily Hazard Analysis & Critical Control Points (HACCP) forms
- ensures that all stations remain stocked before and during each meal period
- verifies that all recipes are followed and correct portions are served
- orders food and supplies as directed
- maintains checkbook daily to properly manage district funds
- trains employees to district standards
- sets excellent work and service examples
- prepares annual performance evaluations for all kitchen staff
- actively participates in cleaning and meal preparation as necessary
- manages staffing levels throughout shift
- oversees kitchen labor and food cost to budgetary requirements
- sets up stations according to restaurant guidelines
- maintains a clean and sanitary work station/kitchen area including tables, shelves, grills, broilers, fryers, sauté burners, steamer, convection oven, flat-top range, dry storage and refrigeration/freezer equipment
- opens and closes the kitchen properly and follows the checklist
- schedules and conducts staff meetings
- performs additional responsibilities as assigned
